Monday Mood: FOOD!

FOOD!!!

Now that I have your attention, let’s talk. Food and Monday Moods go together. Type A words of wisdom: Don’t connect food with your mood. I’ve been known to eat when I’m stressed. Not healthy. Now my go-to for stress  is  exercise. Step out. Walk a bit. Pray.

If I’m at work and feeling stressed, I find a staircase or high-tail it to the bathroom. Take a deep breath. Splash a little cold water on my face. Then back I go.

So whether you eat or drink or whatever you do, do it all for the glory of God. – 1 Corinthians 10:31

When it comes to food, it’s helpful to think about the above Bible verse.  -Is my diet glorifying the body God gave me?  This isn’t about starvation, folks. It’s about moderation in all things.

Now…back to food!I’m big on nibbling. I like to graze. Ask my kids. All their lives, cut carrots and green peppers graced our countertop. Hungry? Take a crunch!

-Why follow a recipe and cook a whole meal when popcorn and carrots constitute a healthy, balanced diet..right? Haha!

Remember – the Type A Lady is not a health coach!

The closest I get to cooking is roasting veggies. They’re easy. They’re fast. Big plus: they’re healthy!

Here’s my little recipe for roasted veggies

(Disclaimer! Proceed with caution!)

Roasted Brussel Sprouts
(you can do this with cauliflower, broccoli, asparagus – almost any veggie!)

__Brussel Sprouts washed and halved
__Olive Oil
__Lemon Pepper Seasoning (use sparingly)
__Seeds (your choice. I use sesame or flax)
__Spritz of Lemon juice (if you want!)

Toss together and spread on a cookie sheet.
Bake in the oven at 350 degrees until lightly toasted*
*I usually go 15 – 20 minutes – This is quite a matter of personal preference, depending on how crunchy you like your veggies.

Here’s some of the awesome food I encountered while traveling the past few weeks. I’m proud to say, some of it was prepared by my daughters. (They must have learned to cook from outside sources!)

Even water can be beautiful.
Fish is a healthy food. In some restaurants, it’s a work of art.
Lemon ginger tea in a London pub. It’s the perfect way to snack!
Dessert does not have to be big to be yummy!
Never forget: “Wee Bites”!
